Ingredients

  • 3 medium zucchini, sliced into ½-inch rounds

  • Spray olive oil (or 1–2 tablespoons if brushing)

  • 1 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • ½ cup grated Parmesan cheese

Optional Add-ins:

  • 23 tablespoons panko breadcrumbs (for extra crunch)

  • Garlic powder, onion powder, or smoked paprika (for extra flavor)

  • Red pepper flakes (for heat)

  • Yellow squash (as a swap or mix-in)


Instructions

  • Preheat your air fryer to 400°F (200°C).

  • Wash and slice zucchini into even ½-inch rounds.

  • In a large bowl, toss zucchini with olive oil, Italian seasoning, salt, and pepper.

  • Add the grated Parmesan and gently toss again to coat.

  • Arrange zucchini in a single layer in the air fryer basket, working in batches if needed.

  • Air fry for 8–10 minutes, shaking halfway through, until golden brown and crispy on the edges.

 

  • Serve immediately while warm and cheesy, with your favorite dip if desired.

Notes

  • For best crispiness, don’t overcrowd the air fryer basket—air circulation is key.

  • Freshly grated Parmesan gives the best melt and flavor; avoid pre-shredded if you can.

  • Add panko for crunchier bites, or swap in yellow squash for color and variety.

  • Reheat leftovers in the air fryer at 375°F for 3–4 minutes—good as new!

  • Great served with ranch, marinara, or garlic aioli on the side.
