Description
Air Fryer Zucchini with Parmesan is a quick, crispy, and cheesy veggie side that turns simple zucchini into golden, savory perfection. Just a handful of ingredients and 10 minutes in the air fryer make this a go-to favorite for snacking, sharing, or serving alongside any main dish!
Ingredients
-
3 medium zucchini, sliced into ½-inch rounds
-
Spray olive oil (or 1–2 tablespoons if brushing)
-
1 teaspoon Italian seasoning
-
Salt and pepper, to taste
-
½ cup grated Parmesan cheese
Optional Add-ins:
-
2–3 tablespoons panko breadcrumbs (for extra crunch)
-
Garlic powder, onion powder, or smoked paprika (for extra flavor)
-
Red pepper flakes (for heat)
-
Yellow squash (as a swap or mix-in)
Instructions
-
Preheat your air fryer to 400°F (200°C).
-
Wash and slice zucchini into even ½-inch rounds.
-
In a large bowl, toss zucchini with olive oil, Italian seasoning, salt, and pepper.
-
Add the grated Parmesan and gently toss again to coat.
-
Arrange zucchini in a single layer in the air fryer basket, working in batches if needed.
-
Air fry for 8–10 minutes, shaking halfway through, until golden brown and crispy on the edges.
-
Serve immediately while warm and cheesy, with your favorite dip if desired.
Notes
-
For best crispiness, don’t overcrowd the air fryer basket—air circulation is key.
-
Freshly grated Parmesan gives the best melt and flavor; avoid pre-shredded if you can.
-
Add panko for crunchier bites, or swap in yellow squash for color and variety.
-
Reheat leftovers in the air fryer at 375°F for 3–4 minutes—good as new!
-
Great served with ranch, marinara, or garlic aioli on the side.
