Ingredients
-
1 box (3 oz) watermelon gelatin mix
-
1 cup boiling water
-
1 cup coconut rum
-
½ cup peach schnapps
-
½ cup cold water
-
Optional: whipped cream, for topping
-
Optional: maraschino cherries, for garnish
Instructions
-
In a mixing bowl, pour the boiling water over the watermelon gelatin. Stir for at least 2 minutes until fully dissolved.
-
Add in the coconut rum, peach schnapps, and cold water. Mix well to combine all the boozy goodness.
-
Carefully pour the liquid into 2 oz plastic shot cups, filling each about ¾ full to leave room for toppings.
-
Transfer the cups to a tray or baking sheet and place them in the refrigerator for at least 4 hours (or overnight) until set.
-
Just before serving, top each shot with a swirl of whipped cream and a maraschino cherry. Serve chilled and enjoy the island vibes!
Notes
-
For a stronger batch, reduce the cold water and slightly increase the alcohol.
-
Want to jazz them up? Drop a small chunk of pineapple or mango into each cup before chilling.
-
If using silicone molds instead of cups, lightly grease them for easy removal.
-
These shots are best enjoyed within 3–5 days and should be stored in the fridge—don’t freeze them!
