These Boozy Barbie Pineapple Rings are a vibrant, juicy, and spiked party treat soaked in pink Kool-Aid syrup and vodka or coconut rum. Candy-sweet, irresistibly pretty, and full of tropical flavor, they’re the perfect make-ahead snack for summer parties, girls’ nights, or your next Barbie-themed bash!
Ingredients
1 can (20 oz) pineapple rings, drained (or use fresh slices)
1 cup water
1 cup sugar
1 packet pink Kool-Aid (pink lemonade or strawberry)
½ to 1 cup vodka or coconut rum (adjust to taste)
Optional: edible glitter or candy sprinkles for garnish
Instructions
Make the syrup: In a medium saucepan, combine water and sugar. Bring to a boil, stirring until the sugar completely dissolves. Remove from heat and stir in the packet of Kool-Aid until fully blended. Let cool slightly.
Soak the pineapple: Place drained pineapple rings in a shallow container. Pour the cooled Kool-Aid syrup over the top, then add your chosen alcohol. Ensure the rings are fully submerged.
Chill and infuse: Cover and refrigerate for at least 4–6 hours, or overnight for maximum flavor and color.
Serve: Remove the rings using tongs and plate them chilled. Garnish with edible glitter or candy sprinkles just before serving if desired.
Notes
Fresh pineapple works great too—just slice into ½-inch rings.
For a non-alcoholic version, swap booze for lemon-lime soda or flavored sparkling water.
The longer the soak, the deeper the color and flavor—overnight is ideal.
Use flavored vodkas like strawberry or pineapple for extra flair.
Store leftovers in the fridge, fully submerged in syrup, for up to 5 days.
