1 envelope Knox unflavored gelatin
-
½ cup orange liqueur (Triple Sec or Cointreau)
-
½ cup boiling water
For the Orange Layer:

1 cup Orange Gatorade or orange soda
-
1 envelope Knox unflavored gelatin
-
½ cup orange liqueur
-
½ cup boiling water
Optional Rim Garnish:
-
Orange juice (for dipping)
-
Coarse sugar (for sparkle)
Instructions
-
Make the Blue Layer:
In a medium bowl, pour chilled Baja Cabo Citrus. Sprinkle 1 envelope of gelatin over the top and let it bloom for 5 minutes. Add ½ cup boiling water and whisk until fully dissolved. Stir in ½ cup orange liqueur. Pour the blue mixture halfway into each shot cup and refrigerate for 1 hour or until set. -
Make the Orange Layer:
In another bowl, pour the Orange Gatorade. Sprinkle the second envelope of gelatin over it and let it bloom for 5 minutes. Add ½ cup boiling water and stir until the gelatin dissolves. Mix in ½ cup orange liqueur. Gently pour the orange mixture over the set blue layer in each cup. Chill again for at least 1 hour or until fully set. -
Add the Optional Sugar Rim (just before serving):
Dip the rim of each shot cup in orange juice, then into coarse sugar for a sparkling finish. -
Serve cold and enjoy!
Notes
-
Be sure each layer is fully set before adding the next to keep the colors clean and defined.
-
Use chilled soda to help the gelatin bloom evenly and set properly.
-
You can swap the orange liqueur for vodka, rum, or even go alcohol-free by replacing it with more soda or juice.
-
These can be made 1–2 days ahead. Keep covered and refrigerated until serving.
-
Use a spoon to pour the top layer gently so it doesn’t disturb the bottom set layer.
