For the Chicken:

  • 2 boneless, skinless chicken breasts (or thighs)

  • ½ cup buttermilk (or ½ cup milk + 1 tsp lemon juice)

  • ½ cup all-purpose flour

  • ½ cup panko breadcrumbs

  • ½ tsp paprika

  • Salt & pepper to taste

  • Oil for frying

For the Wrap:

  • 46 large romaine or iceberg lettuce leaves (whole and unbroken)

  • 4 strips crispy bacon, chopped

  • ¼ cup Caesar dressing (store-bought or homemade)

  • 2 tbsp grated Parmesan cheese

Optional Add-Ons:

  • Lemon wedges

  • Cherry tomatoes, halved

  • Avocado slices

  • Soft-boiled egg slices


Instructions

  • Marinate the Chicken
    Cut chicken into bite-sized pieces. Soak in buttermilk for 15–20 minutes to keep it juicy and tender.

  • Prepare the Coating
    In a bowl, mix flour, panko, paprika, salt, and pepper.

  • Coat and Fry the Chicken
    Dredge marinated chicken in the flour mixture, pressing to coat. Heat oil in a skillet and fry chicken for 3–4 minutes per side, until golden brown and fully cooked. Drain on paper towels.

  • Prep the Lettuce Wrap Base
    Wash and thoroughly dry the lettuce leaves. Overlap 2–3 leaves to form a sturdy wrap base.

 

  • Assemble the Wraps
    Place fried chicken in the center of the lettuce. Add chopped bacon, drizzle Caesar dressing over the top, and sprinkle with Parmesan. Fold or roll into a wrap, securing with a toothpick if needed.

Notes

  • Lettuce Matters: Romaine hearts and iceberg are best for structure and crunch. Avoid soft lettuces like butter or spring mix.

  • Air Fry Option: Want a lighter version? Air fry the chicken at 400°F for 8–10 minutes, flipping halfway through.
