Yellow Layer:

  • ½ cup pineapple juice

  • ½ cup pineapple chunks (fresh or frozen)

  • 1½ oz coconut rum

  • 1 cup ice

Blue Layer:

  • 1 oz blue curaçao

  • ½ cup Sprite or lemonade

  • 1 oz light rum (optional)

  • 1 cup ice

Garnishes (optional but fun!):

  • Pineapple wedges

  • Maraschino cherries

  • Lime wheels

  • Cocktail umbrellas or colorful straws


Instructions

  1. Blend the Yellow Layer:
    In a blender, combine pineapple juice, pineapple chunks, coconut rum, and ice. Blend until smooth and thick. Divide evenly between two tall glasses, filling each halfway. Place the glasses in the freezer while you prep the next layer.

  2. Blend the Blue Layer:
    Rinse your blender. Add blue curaçao, Sprite or lemonade, light rum (if using), and ice. Blend until slushy.

  3. Layer the Cocktail:
    Slowly pour or spoon the blue layer over the frozen yellow base. For best results, pour over the back of a spoon to keep the layers from mixing.

  4. Garnish and Serve:
    Add a pineapple wedge, cherry, lime wheel, or paper umbrella. Serve immediately and enjoy the beachy vibes!

Notes

  • For a non-alcoholic version, swap the rums and curaçao with coconut water and blue sports drink or blue raspberry lemonade.

  • The thicker your yellow layer, the better your color separation will be. A quick 5–10 minute freeze helps hold the layers!

  • Want more creaminess? Add a scoop of vanilla ice cream or a frozen banana to the yellow layer.
