Whether you make it boozy or keep it light, this drink is refreshing, eye-catching, and a guaranteed crowd-pleaser. Serve it at your next gathering or treat yourself to a mini vacation in a glass!

Ingredients

Scale

Green Layer:

  • 1 cup lime sherbet, slightly softened

  • 2 oz KēKē Key Lime Pie Liqueur

  • 1 cup ice

White Layer:

  • 2 oz cream of coconut (e.g., Coco Lopez)

  • 4 oz coconut water

  • 1 cup ice

  • Optional: 1–2 oz white rum

Garnish:

  • Lime wheel

  • Toasted coconut flakes

Instructions

  • Blend the Green Layer
In a blender, combine lime sherbet, KēKē Key Lime Pie Liqueur, and ice. Blend until smooth and slushy. Pour halfway into two tall glasses and place them in the freezer to help maintain the layer.

  • Rinse & Blend the White Layer
Rinse out the blender, then blend cream of coconut, coconut water, ice, and white rum (if using) until creamy and thick.

  • Layer the Drink
Slowly pour the white layer over the green using the back of a spoon to keep the layers distinct.

  • Garnish & Serve
Top with a lime wheel and a sprinkle of toasted coconut flakes. Serve immediately with a straw or long spoon.

Notes

  • For best results, use crushed ice and slightly softened sherbet for easy blending.

  • To keep the layers from blending too quickly, freeze your glasses for a few minutes before assembling.

  • This recipe is easily made non-alcoholic—just skip the liqueur and rum, and replace with lime juice and a touch of agave or simple syrup.

  • Want to batch it for a party? Blend each layer in larger quantities and assemble just before serving.

  • Don’t skip the toasted coconut on top—it adds crunch and extra flavor that makes this drink feel even more special.
