  • 6 fresh pineapple rings (½-inch thick, cored and patted dry)

  • 2 cups granulated sugar

  • ½ cup light corn syrup

  • ½ cup water

  • ½ teaspoon blue food coloring (gel or liquid)

  • ½ teaspoon blue raspberry or cotton candy extract (optional)

Toppings (optional):

  • Sour gummy candy bits

  • Crushed rock candy or sour hard candy

  • Edible glitter (optional)

Optional Boozy Soak:

  • Blue raspberry vodka or rum (enough to submerge pineapple rings)


Instructions

  • Prepare Pineapple: Slice fresh pineapple into ½-inch rings and core them. Pat them completely dry with paper towels and place on parchment paper or a cooling rack to air dry while you prep the candy.

  • Make Candy Coating: In a medium saucepan, combine sugar, corn syrup, and water over medium heat. Stir until the sugar dissolves, then stop stirring. Attach a candy thermometer and cook until the mixture reaches 300°F (hard crack stage).

  • Color & Flavor: Remove from heat immediately. Stir in blue food coloring and optional flavoring extract.

  • Dip the Rings: Carefully dip each pineapple ring into the hot candy syrup using tongs or forks. Let excess drip off, then place each ring on a sheet of parchment paper or greased cooling rack.

  • Top While Sticky: Quickly sprinkle on your choice of sour candy, rock sugar, and glitter before the coating sets. Work fast—it hardens in about 30–60 seconds!

 

  • Let Cool: Allow the coated rings to set at room temperature for 15–20 minutes before serving.

Notes

  • Dry = Success: The drier your pineapple, the better the candy coating will stick. Excess moisture can cause it to slide right off.

  • No Candy Thermometer? You can test the syrup by dropping a small bit into cold water—if it forms brittle threads, it’s ready.

  • Boozy Version: Soak pineapple in vodka or rum for 30–60 minutes, then pat them extremely dry before coating. Store chilled and serve the same day.

  • Storage Tips: Keep finished rings in an airtight container at room temp for up to 2 days. Don’t refrigerate or the candy shell may get sticky.
