Ingredients

  • 1 box (3 oz) lime Jell-O

  • 1 cup boiling water

  • ½ cup cold water

  • ½ cup green chile vodka (or plain vodka)

  • 1 lime wedge (for rimming cups)

  • Clamato chile lime salt or Tajín (for rimming)

  • Optional garnishes: mini lime wedges, jalapeño slivers, or chile-dusted candies


Instructions

  1. Run a lime wedge around the rim of each plastic shot cup. Dip the rims into chile-lime salt or Tajín. Set aside.

  2. In a mixing bowl, dissolve the lime Jell-O powder in 1 cup of boiling water. Stir until fully dissolved, about 2 minutes.

  3. Add ½ cup cold water and ½ cup green chile vodka. Stir to combine.

  4. Carefully pour the mixture into your prepared shot cups, filling them about ¾ of the way.

  5. Place the cups on a tray and refrigerate for 2–3 hours, or until fully set.

  6. Garnish with mini lime wedges or a slice of jalapeño just before serving. Serve cold and enjoy!

Notes

  • If green chile vodka isn’t available, infuse plain vodka with fresh green chiles or jalapeños for 24–48 hours.

  • For a sweeter flavor, use less rimming salt or add a splash of simple syrup.

  • Make these alcohol-free by replacing vodka with cold limeade or additional cold water.

  • Best served cold and within 3–4 days. Avoid freezing—gelatin doesn’t thaw well.

  • Want even more flair? Top with chile gummies or serve alongside watermelon slices for contrast.
