Serves: 2 cocktails

  • 2 oz white rum (such as Bacardi)

  • 1½ cups frozen strawberries

  • ¾ cup cream of coconut (or coconut milk for a lighter version)

  • ½ cup pineapple juice

  • 1 tbsp freshly squeezed lime juice

  • 1 cup ice

Optional Garnishes:

  • Fresh strawberries

  • Pineapple wedges

  • Shredded coconut (for rimming the glass)

  • Red sugar or strawberry syrup (for added flair)


Instructions

  • Prepare your glasses (optional):
    Run a lime wedge around the rims of two glasses. Dip in red sugar or shredded coconut. Place in the freezer to chill while you blend the cocktail.

  • Blend the cocktail:
    In a blender, combine the white rum, frozen strawberries, cream of coconut, pineapple juice, lime juice, and ice. Blend until smooth and creamy. Adjust texture with more ice or juice as needed.

 

  • Serve and garnish:
    Pour into chilled glasses. Garnish with a fresh strawberry and pineapple wedge. For extra flair, drizzle strawberry syrup inside the glass before pouring.

Notes

  • Want to make it non-alcoholic? Just skip the rum and replace it with pineapple juice, coconut water, or sparkling water.

  • For extra creaminess, try adding a scoop of vanilla ice cream—trust me, it’s dessert and drink in one.

  • This cocktail can be pre-blended and frozen for up to 24 hours. Let it sit for a few minutes and stir or re-blend before serving.

  • Coconut rum works great for a sweeter, more tropical version.

 

  • Use frozen strawberries to help keep the texture thick and slushy—fresh strawberries will work too, but you’ll need more ice.
