Ingredients

  • ½ cup fresh lime juice (key lime or Persian recommended)

  • 1 cup coconut cream (Coco López or thick canned variety)

  • 2 oz white rum (optional, for the cocktail version)

  • 1½ cups crushed ice

  • 1 tbsp simple syrup (or more to taste)

  • Zest of 1 lime

  • Pinch of sea salt


Instructions

  • Prep your blender
    Juice your limes, zest one, and gather all your ingredients.

  • Add ingredients to blender
    Combine the lime juice, coconut cream, white rum (if using), crushed ice, simple syrup, lime zest, and sea salt in a high-speed blender.

  • Blend until smooth
    Blend on high speed for 20–30 seconds, or until the mixture is creamy and slushy.

  • Taste and adjust
    Sip and tweak! Add more sweetener if it’s too tart or extra lime juice for a sharper citrus punch.

 

  • Serve immediately
    Pour into chilled glasses and garnish with lime wheels, pineapple chunks, or a sprinkle of toasted coconut.

Notes

  • For a frostier texture, pre-freeze your coconut cream in ice cube trays.

  • To create a layered swirl effect, blend the coconut cream and lime juice mixture separately, then gently swirl together in your glass.

  • No rum? No problem! This mocktail version is just as bright and refreshing.

  • Bottled lime juice works in a pinch, but fresh juice gives the best flavor by far.
