- 1 box (3 oz) watermelon-flavored gelatin mix
- 1 cup boiling water
- 1/2 cup Malibu Coconut Rum
- 1/2 cup cold water
- Optional: Fresh watermelon cubes, whipped cream, or sprinkles for garnish
Instructions
- In a medium mixing bowl, add the watermelon gelatin mix.
- Pour in the boiling water and stir until the gelatin fully dissolves (about 2 minutes).
- Stir in the cold water and Malibu Coconut Rum until combined.
- Carefully pour the mixture into small shot cups or molds, filling each about 3/4 full.
- Refrigerate for at least 2–4 hours, or until the gelatin sets completely.
- Optional: Top each shot with a small watermelon cube, a dollop of whipped cream, or sprinkles before serving.
Notes
- For a stronger kick, replace the 1/2 cup cold water with an additional 1/2 cup Malibu Coconut Rum.
- Want a non-alcoholic version? Use coconut-flavored sparkling water instead of the rum!
- Silicone molds make it easy to pop out the jello shots for serving, but disposable plastic shot cups work perfectly too.
- Keep refrigerated until ready to serve to maintain the texture and flavor.
