Meet Me at Midnight – The Glam Champagne Glow-Up with Blue Curaçao and Grenadine

  • Author: Sam

Description

Meet Me at Midnight is a sparkling, layered champagne cocktail made with blue curaçao and grenadine—perfect for glitzy celebrations, midnight toasts, or anytime you want to add a little extra sparkle to your glass. Topped with bubbly and finished with a gold-sprinkled rim, it’s anything but boring! Make it tonight and turn your evening into something unforgettable.

Ingredients

Scale
  • ½ oz grenadine

  • ½ oz blue curaçao liqueur (not syrup)

  • Chilled champagne or prosecco (to top off)

  • Corn syrup (for rimming the glass)

  • Gold edible glitter or sprinkles (for rim and sparkle)

Optional Garnish:

  • Edible shimmer cube or golden sugar star

Instructions

  1. Prepare the Rim: Pour corn syrup onto a small plate and gold sprinkles on another. Dip the rim of a champagne flute into the syrup, then into the sprinkles to coat. Add a pinch of edible glitter inside the flute if you like extra sparkle.

  2. Layer the Drink: Pour ½ oz grenadine into the bottom of the glass. Slowly pour ½ oz blue curaçao over the back of a spoon to gently layer it on top of the grenadine without mixing.

  3. Top with Champagne: Carefully fill the rest of the glass with chilled champagne or prosecco, pouring slowly to preserve the layers.

  4. Garnish & Serve: Add an edible shimmer cube or gold sugar star if using. Serve immediately while the bubbles are dancing and the layers are vibrant.

Notes

  • For a mocktail version, substitute champagne with sparkling apple cider and use a non-alcoholic blue syrup.

  • Pour gently over the back of a spoon to keep the color layers defined.

  • Rimming the glasses can be done ahead of time—perfect for party prep.

  • Use a brut or dry champagne to balance the sweetness of the grenadine.

  • This drink is best enjoyed fresh to keep the bubbles and color separation at their best.
