Ingredients

1 cup freshly squeezed lemon juice (about 4 to 5 lemons)

1 cup simple syrup (1:1 sugar to water, see Notes)

2 oz Midori (melon liqueur)

2 oz Blue Curaçao

Instructions

Rim your glasses (optional): Rub a lemon wedge along the rim of each glass. Dip into colored or sanding sugar for a festive, mermaid sparkle.

Add ingredients to shaker: In a cocktail shaker filled with ice, pour in the vodka, lemon juice, simple syrup, Midori, and Blue Curaçao.

Shake it up: Shake vigorously for 10 to 15 seconds, or until the shaker feels frosty and chilled.

Strain and serve: Fill glasses with fresh ice and strain the cocktail mixture over the top.

Simple Syrup: To make your own, heat 1 cup sugar with 1 cup water in a saucepan until the sugar dissolves completely. Let cool before using. Store leftovers in the fridge for up to 1 month.

Use fresh lemon juice for the brightest, most refreshing flavor. Bottled juice won’t give the same zing.

To make a non-alcoholic version, substitute lemon sparkling water for vodka, use melon syrup instead of Midori, and replace Blue Curaçao with blue sports drink or a splash of orange juice with food coloring.
