Microwave divinity candy is a classic Southern treat made quick and simple. Ingredients
2 cups granulated sugar
½ cup light corn syrup
½ cup water
2 large egg whites
1 teaspoon vanilla extract
½–¾ cup chopped pecans (toasted, optional)
Pinch of salt
Instructions
Microwave the Sugar Syrup
In a large microwave-safe bowl (at least 2.5 quarts), stir together sugar, corn syrup, and water.
Microwave uncovered on HIGH for 4–5 minutes. Stir gently, then microwave for an additional 4–6 minutes, or until the syrup is thick, bubbly, and reaches 250°F (if using a thermometer). Use extreme caution—it’s very hot.Whip the Egg Whites
While the syrup finishes, beat egg whites and salt in a clean mixing bowl using a hand or stand mixer. Whip until stiff, glossy peaks form.Slowly Add the Hot Syrup
With the mixer running on medium speed, carefully stream the hot syrup into the egg whites. Beat continuously for 4–5 minutes, or until the mixture becomes thick, glossy, and holds its shape.Add Vanilla and Pecans
Beat in the vanilla extract, then gently fold in the chopped pecans.Scoop and Let Set
Quickly drop tablespoon-sized spoonfuls onto parchment-lined trays. Let the candies sit at room temperature, uncovered, for 2–3 hours until dry to the touch.
Notes
Work fast when spooning the mixture—the candy sets quickly once whipped.
Use toasted pecans for a richer, nuttier flavor, or swap in your favorite nuts.
Don’t make on a humid day if possible—divinity sets best in dry conditions.
Store in an airtight container at room temperature for up to 1 week. Avoid refrigeration to prevent stickiness.
A candy thermometer is helpful but not essential—the microwave makes it more forgiving.
