- Dissolve the Gelatin – In a large mixing bowl, pour the boiling pineapple juice over the Island Pineapple Jell-O powder. Stir continuously for about 2 minutes, ensuring the gelatin fully dissolves.
- Incorporate the Cream of Coconut – Whisk in the cream of coconut until completely blended, creating a smooth mixture.
- Add the Remaining Ingredients – Stir in the orange juice, rum, and freshly grated nutmeg, mixing until well combined.
- Pour into Shot Cups – Carefully pour the mixture into 2-ounce plastic or silicone shot cups, filling each half to three-quarters full.
- Chill Until Firm – Arrange the cups on a baking tray and refrigerate for at least 4 hours, or until fully set.
