Ingredients

  • 1 oz vodka

  • 1 oz coffee liqueur (such as Kahlúa)

  • 1 oz Irish cream (such as Baileys)

  • 2 oz pineapple juice

  • 1 oz cream of coconut (or coconut milk for a lighter version)

  • 1 cup ice

  • Chocolate syrup, for glass drizzle (optional)

  • Pineapple wedge, chocolate curls, or toasted coconut, for garnish


Instructions

  • Prepare the Glasses:
    Swirl chocolate syrup along the inside of two chilled glasses. Place them in the freezer for 5–10 minutes to set the drizzle and keep your drink icy cold.

  • Blend the Cocktail:
    In a blender, combine vodka, coffee liqueur, Irish cream, pineapple juice, cream of coconut, and ice. Blend until smooth and creamy.

 

  • Serve and Garnish:
    Pour the blended mixture into the prepared glasses. Garnish with a pineapple wedge, chocolate shavings, or toasted coconut. Serve immediately and sip in tropical bliss.

Notes

  • Make it dairy-free: Use a vegan Irish cream and ensure your coffee liqueur is dairy-free. Coconut cream works perfectly in place of regular cream.

  • Want it thicker? Swap out the ice for frozen pineapple chunks or toss in a scoop of vanilla ice cream for an extra-luxurious version.

  • No cream of coconut? You can use canned coconut milk, but you may want to sweeten it with a touch of honey or simple syrup to match the classic flavor.

  • Serving a crowd? Easily scale this recipe up and blend in batches.

 

  • Mocktail version: Replace the alcohol with coffee syrup, chocolate syrup, and coconut milk for a kid-friendly treat.
