  • Author: Sam

Description

A vibrant and layered frozen cocktail that tastes like a slice of pineapple upside down cake in a glass! This Pineapple Upside Down Cake Daiquiri blends sweet pineapple, juicy strawberry, and cake-flavored spirits into a creamy, fruity daiquiri that’s perfect for summer sipping. It’s easy to make, visually stunning, and guaranteed to steal the show at your next brunch or backyard hangout.

Ingredients

Scale

For the Strawberry Layer:

  • 2 large fresh strawberries

  • A splash of pineapple-coconut sparkling water (La Croix or similar)

  • A few cubes of ice

For the Pineapple Layer:

  • 1 cup frozen pineapple chunks

  • 1 oz whipped cream vodka

  • ½ oz pineapple rum

  • A splash of pineapple-coconut sparkling water

  • 1 to handfuls of crushed ice

Optional Garnish:

  • Fresh strawberry or pineapple wedge

Instructions

  1. Make the Strawberry Layer:
In a blender, combine strawberries, a splash of sparkling water, and a few ice cubes. Blend until smooth and pour into the bottom of two glasses.

  2. Make the Pineapple Layer:
Rinse the blender, then add frozen pineapple, whipped cream vodka, pineapple rum, another splash of sparkling water, and crushed ice. Blend until thick and creamy.

  3. Layer the Cocktail:
Slowly pour the pineapple mixture over the strawberry base in each glass. If the texture is thick enough, the layers will stay beautifully separated.

  4. Garnish and Serve:
Add a strawberry slice or pineapple wedge on top. Serve immediately with a straw and enjoy that tropical, cake-like sip!

Notes

  • Use frozen fruit for the thickest texture. If using fresh pineapple, increase the ice to keep it slushy.

  • No whipped cream vodka? Try vanilla or cake-flavored vodka instead.

  • Want to make it a mocktail? Replace the alcohol with a splash of pineapple juice and a touch of vanilla extract.

  • For cleaner layers, chill your glasses beforehand and pour the top layer gently over a spoon.

  • You can batch-blend each layer and store them separately in the freezer until serving.
