Ingredients

1½ oz white rum

1 oz fresh lime juice

¾ oz simple syrup (adjust to taste)

2 oz pink coconut water (or pink lemonade + splash of coconut water)

6–8 fresh mint leaves

Crushed ice

Club soda, to top

Optional garnish: lime wheel and mint sprig
Instructions

In a shaker or sturdy glass, add mint leaves, lime juice, and simple syrup. Gently muddle to release the mint oils.

Add the white rum and pink coconut water. Stir or shake lightly.

Fill a tall glass with crushed ice.

Pour the mojito mixture over the ice.

Top with club soda to your desired fizz level.
