A Pink Coconut Mojito is a vibrant, refreshing twist on the classic mojito, blending fresh mint, zesty lime, a splash of white rum, and creamy pink coconut water for a drink that’s as beautiful as it is delicious. It’s the perfect tropical sip for warm afternoons, beachy brunches, or whenever you need a mini-vacation in a glass!


Ingredients

  • 1½ oz white rum

  • 1 oz fresh lime juice

  • ¾ oz simple syrup (adjust to taste)

  • 2 oz pink coconut water (or pink lemonade + splash of coconut water)

  • 68 fresh mint leaves

  • Crushed ice

  • Club soda, to top

  • Optional garnish: lime wheel and mint sprig


Instructions

  1. In a shaker or sturdy glass, add mint leaves, lime juice, and simple syrup. Gently muddle to release the mint oils.

  2. Add the white rum and pink coconut water. Stir or shake lightly.

  3. Fill a tall glass with crushed ice.

  4. Pour the mojito mixture over the ice.

  5. Top with club soda to your desired fizz level.

  6. Stir gently to combine.

  7. Garnish with a lime wheel and mint sprig. Serve immediately!

Notes

  • No pink coconut water? Use pink lemonade and add a splash of coconut water for flavor and that signature blush color.

  • Mocktail version: Skip the rum and add extra coconut water or soda for a refreshing non-alcoholic option.

  • Want it creamier? Add a small splash of cream of coconut for extra richness.

  • Always use fresh mint for best flavor—dried just doesn’t cut it here!

 

  • Make a pitcher: Multiply the ingredients and mix everything (except soda) ahead in a pitcher. Add soda just before serving over ice.
