Pink Layer (Bottom or Swirl)

  • 1 cup frozen strawberries (or 2 tbsp strawberry purée or syrup)

  • 2 oz coconut cream or vanilla liqueur (such as Licor 43)

  • 1½ oz light rum

  • ½ oz grenadine

  • 1 cup ice

Yellow Layer (Top or Swirl)

  • ¾ cup lemonade (preferably frozen concentrate or fresh-squeezed)

  • 2 oz coconut cream

  • 1½ oz light rum

  • 1 cup ice

Optional Garnishes

  • Lemon slices

  • Fresh strawberries

  • Pink or yellow sugar for rimming glasses


Instructions

  • Blend the Pink Layer: In a blender, combine the frozen strawberries, coconut cream or vanilla liqueur, rum, grenadine, and ice. Blend until smooth and thick, like a soft sorbet. Transfer to a freezer-safe container and chill for 5–10 minutes.

  • Blend the Yellow Layer: Rinse the blender and add the lemonade, coconut cream, rum, and ice. Blend until smooth and creamy. Freeze briefly to help it hold shape when layered.

  • Assemble the Cocktail: In two chilled glasses, alternate spoonfuls of the pink and yellow layers to create a marbled swirl effect. Use a skewer or spoon handle to gently swirl, if desired.

 

  • Garnish and Serve: Top with lemon slices and fresh strawberries. Serve immediately with a wide straw or cocktail spoon.

Notes

  • For a stronger drink, increase the rum by ½ oz per layer.

  • To make it non-alcoholic, skip the rum and use vanilla extract in place of the liqueur.

  • Chill your glasses before serving to keep the layers distinct and the drink cold.

  • Prepare both layers ahead of time and freeze separately for quick party assembly.

  • Feel free to swap in other fruits like mango or raspberry for a fun twist!
