Red Layer (Bottom):

  • ½ cup strawberry purée or frozen strawberries

  • ½ cup crushed ice

  • 1 oz white rum

  • ½ oz simple syrup (optional)

Yellow Layer (Middle):

  • ½ cup pineapple juice

  • ½ cup crushed ice

  • 1 oz white rum

  • Splash of coconut cream (optional)

Blue Layer (Top):

  • ½ cup blue curaçao

  • ½ cup crushed ice

  • 1 oz white rum

Garnish (Optional):

  • Lemon wheel

  • Maraschino cherry

  • Cocktail umbrella

  • Splash of club soda


Instructions

  1. Make the Red Layer:
    In a blender, combine strawberry purée (or frozen strawberries), crushed ice, white rum, and simple syrup. Blend until smooth and slushy. Pour into the bottom of a tall cocktail glass.

  2. Make the Yellow Layer:
    Rinse the blender. Blend pineapple juice, crushed ice, white rum, and a splash of coconut cream (if using). Gently spoon over the red layer using the back of a spoon to keep the colors from mixing.

  3. Make the Blue Layer:
    Rinse the blender again. Blend blue curaçao, crushed ice, and white rum until slushy. Slowly spoon over the yellow layer for a perfect top layer.

  4. Garnish and Serve:
    Top with a lemon wheel and cherry on a cocktail pick. Add a cocktail umbrella for fun and a splash of club soda for a fizzy finish, if desired. Serve immediately and enjoy every colorful sip!

Notes

  • Use crushed ice for smoother blending and better slushy texture.

  • Chill your glass beforehand to help the layers stay firm and slow melting.

  • For a non-alcoholic version, replace the rum and blue curaçao with flavored juices or soda water.

  • Make it ahead by prepping each layer separately and storing them in the freezer until ready to serve.
