Ingredients
1 box (3 oz) raspberry gelatin
1 cup boiling water
½ cup silver or blanco tequila
¼ cup triple sec
2 tablespoons fresh lime juice
¼ cup raspberry syrup or muddled raspberries (strained)
½ cup cold water
Fresh raspberries (for garnish)
Lime wedges (for garnish)
Salt or sugar (for optional rim)
2 oz plastic shot cups
Instructions
Prep the cups (optional): Rub a lime wedge around the rim of each plastic cup and dip into salt or sugar. Set aside.
Dissolve the gelatin: In a mixing bowl, pour 1 cup of boiling water over the raspberry gelatin. Stir for 2 minutes until fully dissolved.
Mix in liquids: Add tequila, triple sec, lime juice, raspberry syrup (or strained muddled raspberries), and ½ cup cold water. Stir to combine.
Fill the cups: Pour the mixture into 2 oz plastic shot cups, filling each about ¾ full.
Chill: Refrigerate the shots for 2–4 hours or until fully set.
Garnish and serve: Just before serving, top each with a fresh raspberry and a mini lime wedge for a festive touch.
Notes
For a spicier twist, use chili-lime salt for the rim or add jalapeño-infused tequila.
No raspberry syrup? Use fresh raspberries, muddled and strained, or a spoonful of raspberry preserves mixed with warm water.
Want a mocktail version? Replace the alcohol with raspberry lemonade or lemon-lime soda.
These can be made up to 24 hours in advance and stored in the fridge for up to 5 days.
