Ingredients
Gummy Base:
1½ cups root beer (regular, not diet)
½ cup whiskey (bourbon or vanilla-flavored work best)
3 envelopes (7.5 teaspoons) unflavored gelatin
2 tablespoons brown sugar (optional, for added sweetness)
Cream Swirl (Optional):
¼ cup sweetened condensed milk
⅓ cup hot water
1 envelope (2.5 teaspoons) unflavored gelatin
Topping:
Fresh whipped cream or whipped topping (for garnish)
Instructions
Bloom the Gelatin:
In a saucepan, pour 1 cup of root beer and sprinkle 3 envelopes of unflavored gelatin evenly over the top. Let sit for 5 minutes to bloom.Heat Gently:
Warm the bloomed mixture over low heat, stirring constantly until the gelatin fully dissolves. Don’t let it boil.Mix in Whiskey and Sweetener:
Remove from heat. Add the remaining ½ cup of root beer and the whiskey. Stir well to combine. Stir in brown sugar if desired.Prepare the Cream Swirl (Optional):
In a bowl, whisk together sweetened condensed milk and hot water. Sprinkle in 1 envelope of gelatin and whisk until smooth. Let cool slightly.Swirl Cream into Root Beer Mix:
Gently swirl the cream mixture into the root beer mixture. Stir once or twice only—aim for a marbled look, not a full mix.Pour and Set:
Pour the mixture into silicone molds, mini shot molds, or a square dish. Refrigerate for at least 3 hours or until fully set.Cut and Garnish:
Remove from molds or cut into cubes. Just before serving, top each gummy with a small swirl of whipped cream.

Don’t skip the bloom time. It’s key for smooth texture!
Avoid boiling. High heat ruins the gelatin’s setting power.
Use full-sugar soda. Diet versions don’t set properly and alter the flavor.

For a non-alcoholic version, replace the whiskey with extra root beer.
