Ingredients

4 cups flat root beer (let it sit out to remove the fizz)

3 cups vanilla ice cream, softened
Instructions

Let the root beer sit out at room temperature for 1–2 hours until fully flat. You can also whisk it gently to speed up the process.

Soften the vanilla ice cream by leaving it out for about 10–15 minutes until scoopable but not melted.

In a large mixing bowl, whisk the root beer and ice cream together until smooth and well combined. The mixture should resemble a creamy float.

Pour the mixture into popsicle molds, leaving about ¼ inch at the top for expansion.

Insert popsicle sticks. If your molds don’t hold the sticks upright, freeze for 1 hour first, then insert the sticks.

Freeze for at least 6 hours, or overnight, until completely solid.

To unmold, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.

Use only flat root beer—carbonation causes separation and icy texture.

Feel free to swap in dairy-free vanilla ice cream for a vegan version.

Store extras in a freezer-safe bag with parchment paper between them. They’ll keep for up to 2 weeks.
