Root Beer Popsicles are your favorite root beer float—frozen on a stick! Made with just root beer and vanilla ice cream, these creamy, nostalgic pops are perfect for hot summer days, backyard BBQs, or a sweet family treat. Ingredients

  • 4 cups flat root beer (let it sit out to remove the fizz)

  • 3 cups vanilla ice cream, softened


Instructions

  • Let the root beer sit out at room temperature for 1–2 hours until fully flat. You can also whisk it gently to speed up the process.

  • Soften the vanilla ice cream by leaving it out for about 10–15 minutes until scoopable but not melted.

  • In a large mixing bowl, whisk the root beer and ice cream together until smooth and well combined. The mixture should resemble a creamy float.

  • Pour the mixture into popsicle molds, leaving about ¼ inch at the top for expansion.

  • Insert popsicle sticks. If your molds don’t hold the sticks upright, freeze for 1 hour first, then insert the sticks.

  • Freeze for at least 6 hours, or overnight, until completely solid.

 

  • To unmold, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.

Notes

  • Use only flat root beer—carbonation causes separation and icy texture.

  • Feel free to swap in dairy-free vanilla ice cream for a vegan version.

  • These also work great with cream soda or cherry cola for a twist.

  • Store extras in a freezer-safe bag with parchment paper between them. They’ll keep for up to 2 weeks.

 

  • Want to make them adult-friendly? Add a tablespoon of spiced rum or vanilla vodka to the batch—just enough to boost flavor without preventing freezing.
