This Strawberry Piña Colada Lava Flow is the frozen tropical cocktail you didn’t know you needed! A creamy coconut-pineapple colada meets a swirl of fresh strawberry “lava” for a drink that tastes like an island escape. It’s fruity, refreshing, and just stunning in a glass—perfect for summer parties, beach days, or when you just want a mini vacation in a sip.

For the Piña Colada Base:

  • 1 cup ice

  • ½ cup pineapple juice

  • ¼ cup cream of coconut (like Coco Lopez)

  • 2 oz coconut rum (or white rum)

  • Optional: 1 tbsp heavy cream (for extra richness)

For the Strawberry Lava:

  • ¾ cup frozen strawberries

  • 1 oz strawberry daiquiri mix or 1 tbsp strawberry syrup

  • 1 oz rum (optional)

  • 2 tbsp pineapple juice

Garnish (optional):

  • Pineapple wedges

  • Fresh strawberries

  • Cocktail umbrellas or pineapple fronds


Instructions

  • Make the Strawberry Lava:
    In a blender, combine frozen strawberries, strawberry daiquiri mix (or syrup), 2 tbsp pineapple juice, and rum (if using). Blend until smooth and set aside.

  • Make the Piña Colada Layer:
    Rinse out the blender, then add ice, pineapple juice, cream of coconut, coconut rum, and heavy cream if using. Blend until smooth and frothy.

  • Assemble the Lava Flow:
    Pour half the strawberry mixture into the bottom of each glass. Gently pour the piña colada mix over the top. Drizzle the remaining strawberry lava on top to create that flowing lava look.

 

  • Garnish and Serve:
    Add pineapple wedges and strawberries on the rim of each glass. Toss in a cute cocktail umbrella or pineapple frond if you have one. Serve with a straw and swirl lightly before sipping.

Notes

  • No alcohol? Just leave out the rum and replace with coconut water or more pineapple juice for a refreshing mocktail version.

  • Want to prep ahead? Blend each layer separately and store in the fridge for up to 24 hours. Re-blend with ice before serving.

  • Layering tip: Pour the colada slowly to avoid mixing the strawberry lava too much—this gives you that gorgeous ripple effect.

  • Make it your own: Try frozen mango or raspberry instead of strawberry for a fun twist on the lava flow.
