Ingredients
Cocktail Version
4 cups diced pineapple (fresh or canned, drained)
2 cups sliced strawberries
2 tablespoons frozen orange juice concentrate
1½ cups cream of coconut (such as Coco López, chilled)
1½ cups coconut rum (like Malibu, chilled)
1 cup pineapple juice
2–3 cups crushed ice
Mocktail Version (Alcohol-Free)
1½ cups coconut water or coconut milk (to replace rum)
Optional: splash of vanilla extract for richness
Optional Garnishes
Pineapple wedges
Strawberry slices
Cocktail umbrellas
Instructions
Blend the base:
In a high-powered blender, combine the pineapple, strawberries, orange juice concentrate, cream of coconut, coconut rum (or coconut water for mocktail), pineapple juice, and crushed ice. Blend until smooth and creamy.Chill before serving:
Pour the blended mixture into a large pitcher or punch bowl. Place in the fridge for at least 30 minutes to chill and let the flavors come together.
Serve and garnish:
Stir the punch before serving, then pour over fresh ice into glasses. Garnish with pineapple wedges, strawberry slices, or cocktail umbrellas for extra fun.
Notes
For a thicker, frostier texture, use frozen fruit instead of fresh.
Cream of coconut is key for that signature piña colada sweetness—don’t substitute with regular coconut milk unless you also sweeten it.
To make this punch ahead of time, blend all ingredients except ice and refrigerate. Add crushed ice and re-blend or stir just before serving.
Leftovers can be stored in the fridge for up to 2 days. Stir well before re-serving.
Want to stretch it further for a crowd? Just double or triple the recipe—the ratios scale beautifully.
