Ingredients

  • 810 fresh mint leaves, plus extra for garnish

  • 1 cup fresh strawberries, sliced

  • ½ cup pineapple chunks (fresh or canned, drained)

  • 12 tablespoons sugar or simple syrup (adjust to taste)

  • Juice of 2 limes

  • 4 ounces white rum

  • 1 cup club soda or sparkling water

  • Ice cubes

  • Garnishes: lime wedges, whole strawberries, mint sprigs


Instructions

  • Muddle the base – In a cocktail shaker or large glass, add the mint, strawberries, pineapple, and sugar. Gently muddle until juicy and aromatic.

  • Add lime juice and rum – Pour in the lime juice and white rum. Stir to combine everything thoroughly.

  • Build your drinks – Fill two glasses with ice. Divide the fruit and rum mixture evenly between them.

  • Top and stir – Pour club soda over each glass and gently stir to swirl the flavors.

 

  • Garnish and serve – Finish with a sprig of mint, a wedge of lime, and a whole strawberry. Serve immediately while it’s fresh and fizzy!

Notes

  • For a non-alcoholic version, skip the rum and add extra club soda or even coconut water.

  • Want extra tropical flair? Use coconut rum or add a splash of pineapple juice.

  • Frozen fruit works too—just let it thaw before muddling.
