Ingredients
8–10 fresh mint leaves, plus extra for garnish
1 cup fresh strawberries, sliced
½ cup pineapple chunks (fresh or canned, drained)
1–2 tablespoons sugar or simple syrup (adjust to taste)
Juice of 2 limes
4 ounces white rum
1 cup club soda or sparkling water
Ice cubes
Garnishes: lime wedges, whole strawberries, mint sprigs
Instructions
Muddle the base – In a cocktail shaker or large glass, add the mint, strawberries, pineapple, and sugar. Gently muddle until juicy and aromatic.
Add lime juice and rum – Pour in the lime juice and white rum. Stir to combine everything thoroughly.
Build your drinks – Fill two glasses with ice. Divide the fruit and rum mixture evenly between them.
Top and stir – Pour club soda over each glass and gently stir to swirl the flavors.

For a non-alcoholic version, skip the rum and add extra club soda or even coconut water.
