This Tropical Swirl Highball is a bright and fruity cocktail layered with creamy coconut, mango nectar, pineapple juice, and a splash of lime—topped with fizz and finished with a gorgeous grenadine swirl. It’s like a beach vacation in a glass, perfect for summer brunches, weekend get-togethers, or any time you’re craving sunshine. Quick to make, stunning to serve, and completely customizable.


Ingredients

  • 1 oz white rum

  • 1 oz coconut cream (not coconut milk)

  • 1 oz mango nectar

  • 1 oz pineapple juice

  • ½ oz fresh lime juice

  • Sprite Tropical Swirl (or regular Sprite, to top)

  • Dash of grenadine

  • Ice (enough to fill your highball glass)

  • Pineapple wedge (for garnish)

  • Maraschino cherry (for garnish)


Instructions

  1. Shake the Base: In a cocktail shaker filled with ice, combine white rum, coconut cream, mango nectar, pineapple juice, and lime juice. Shake well for 10 seconds until chilled and smooth.

  2. Layer the Grenadine: Pour a dash of grenadine into the bottom of your highball glass. Do not stir—this creates the beautiful swirl effect.

  3. Add Ice & Pour: Carefully fill the glass with ice, then slowly pour in the shaken mixture over the ice to keep the layers distinct.

  4. Top with Sprite: Gently pour Sprite Tropical Swirl (or regular Sprite) over the top. Pouring slowly will help preserve the layered look.

  5. Garnish & Serve: Add a pineapple wedge and maraschino cherry to garnish. Serve immediately and enjoy the tropical vibes.

Notes

  • Make it a mocktail: Simply skip the rum for a tropical soda everyone can enjoy.

  • Coconut cream tip: Be sure to use sweetened coconut cream (like Coco Lopez), not coconut milk or cream of coconut.

  • Chill the glass: Want to keep the swirl effect even longer? Chill your glass in the freezer for 10 minutes before building the drink.

  • No mango nectar? Try peach nectar or orange juice for a fun twist.

 

  • Batch for a party: Multiply the base ingredients by 4–6, shake in advance, and refrigerate. Add grenadine, ice, and soda just before serving.
